Stocking the Pantry
September 9
Having
a well-stocked pantry is one of the keys to successful weeknight
cooking, as well as to being prepared for impromptu gatherings. You will
find out what chefs always have on hand, including healthy items that
make easy meals. In addition, you'll learn how to "put up" some of
summer's final crop.
Prep School: Learn to Sauté
September 16
Sautéing
is a cornerstone of French cooking and the ideal method for weeknight
dinners that will be done in minutes. This class uncovers the
differences between sautéing and pan-frying, as well as how to make a
quick pan sauce. Discover how your pan and preparations make the
difference between well-cooked and soggy!
Prep School: Learn to Braise
September 23
As
the weather cools, everyone craves tender braised meats and vegetables
with satisfying sauces. Learn how to braise correctly, from which pan to
use to how to adjust a recipe if you are making it on the stove, in the
oven or in an electric slow cooker. This class will also teach you how
to create that slow-cooked, concentrated flavor more quickly and tell
you which foods are best for braising.
Modern Comforts – The New Casserole
September 30
If
a piping-hot casserole coming out of the oven is a welcome sight after a
long day of work and school, this class is for you! Learn how to create
delicious one-pot meals that add a modern touch to the age-old
comforting casserole. You will discover easy ways to prepare casseroles
in advance, foolproof methods of freezing and reheating, and new recipes
to add to your weeknight repertoire.
